Mix flour,water, oil and salt, work the dough and knead for about 6 minutes or until is smooth and elastic. Enclose in plastic wrap and refrigerate for 30 minutes.
Transfer the dough to a lightly floured surface and divide into 4 equal parts. Roll each portion out to form a 3mm thick oval shape.
Working on one portion at the time, brush both sides with oil, place in a frying pan over medium-high heat and cook for 2 minutes on each side or until lightly charred.
Top with rocket, Puopolo Spcek and squacquerone cheese, fold in half and serve.
